Course One



The inspiration for this dish stems from a traditional butter chicken, albeit that Parminder has stamped his distinctive style on the dish by reinventing it to appear more akin to chicken satay. The chicken skewers have been marinated in a subtle mix of fragrant spices and yoghurt, which is paired with a sumptuous peanut satay sauce which has been gently enhanced with various spices. The buttery, flaky parathas are perfect to enjoy alongside the chicken, just make sure to leave some for the next courses to mop up the delicious sauces!

Course Two



It is with fish that Parminder’s deft touch with punchy spices is best showcased, marrying these strong flavours with the delicate cod and prawns. The tiger prawns are marinated in a strong and sharp East Indian mustard called Kasundi as well as spices that are typically used in Indian pickles to provide fresh, zesty notes. The cod has been marinated in a yoghurt that has been laced with plenty of spices, black pepper and carom seed and is paired with a beautifully balanced sweet and smoky aubergine purée.

Course Three



The finale to this feast includes a slow roasted grass-fed lamb belly that is lathered in a vibrant coriander, mint and green chilli marinade. Alongside this, enjoy meaty pork chops that are glazed in a spicy maple sauce packed full of coriander, cumin seeds and burnt chillies. Refreshing, flavourful salads of fresh heritage tomato and Bombay potato salad aid to cut through the rich meats.
