Getting to Know Maunika Gowardhan

Maunika is an Indian chef and author who was born and raised in Mumbai, India and now lives in the UK. Her food centres around traditional Indian dishes with exciting flavours and ingredients that reflect her upbringing and heritage. Her approach to cooking is simple and enticing with the use of earthy spices, fresh herbs & blends that are synonymous with India. Her career, spanning over a decade, has stemmed from her love of authentic flavours, cooking techniques and being able to share a fresh perspective on the cuisine, which she does through a number of prominent channels including TV appearances, cooking events, a thriving social media presence and through cookbooks, most recently the much-acclaimed best-seller 'Thali'.

We caught up with Maunika on a recent photoshoot to learn a little more about her background and what inspired her.

What is Maunika Gowardhan’s ultimate three-course meal?

Ross: What would your ultimate three-course meal be and why?

Maunika Gowardhan: Any of the options from my meal kit with Finish & Feast! My signature dish that I’ve been perfecting for years is the Butter Chicken served with jeera rice, pickled onions and parathas. It really is a treat!

Maunika’s inspiration behind cooking

Ross: Who or what inspired you to become a chef?

Maunika Gowardhan: The women in my family who cooked and fed our family including my grandmother and mother. To be able to see my dinner table brimming with delicious food when I grew up in India was a privilege and a chance to watch first-hand how cooking not only brings us together, but meals eaten as a family connect us.

Ross: Who is your culinary hero and why?

Maunika Gowardhan: Kamalabai Ogle; an Indian homemaker in the 1950’s in Mumbai. She introduced women to home cooking across India. There weren’t many women in the culinary profession in India when I grew up and she was the first Indian woman in food whose book I owned.

Maunika Gowardhan’s Kitchen Favourites

Ross: Which is your favourite restaurant and why?

Maunika Gowardhan: Barshu in Soho. They do my favourite Sichuan dishes. I always try to visit when I’m in London.

Ross: What is your favourite cookery book?

Maunika Gowardhan: Ah that is really difficult! I love David Thompson Thai Food, Stirring Slowly by Georgina Hayden and Jerusalem by Yotam Ottolenghi and Sami Tamimi.

Ross: Which 3 ingredients do you always have stocked in your kitchen?

Maunika Gowardhan: I always have green chillies, a few varieties of dal and ghee.

Ross: What is your favourite ingredient and why?

Maunika Gowardhan: Kashmiri chilli powder – it’s a staple in my dishes as the colour and flavour is the right balance for Indian recipes.

Ross: And lastly, what is your favourite cocktail and why?

Maunika Gowardhan: My favourite cocktail is a Negroni. I love cocktails with a bit of bitterness that aren’t too sweet. I can only have one though!
