Introducing Loch Duart Salmon 🏴
Loch Duart have been farming salmon in the remote and beautiful communities of Sutherland and the Outer Hebrides in Scotland since 1999. In this time, they have developed a reputation for outstanding excellence, which has landed them on the plates of leading restaurants around the world.
Loch Duart have made the welfare of the salmon their highest priority, pioneering innovative projects to constantly improve the quality of the salmon they produce.
Loch Duart salmon is slow grown with low stocking densities, allowing nature to create the best quality fish. Wrasse – a cleaner fish - is used to remove naturally occurring lice from the salmon, rather than biological methods.
All this means that the Loch Duart salmon are indistinguishable from wild salmon with bright eyes, silvery skin, and a distinctive torpedo shape.

Our chefs gently cure this superb Loch Duart salmon over a number of days in treacle, lemongrass and ginger to give it a subtle sweetness and hints of Asian flavours. A fresh, dill yoghurt and pickled cucumbers cut through the rich Loch Duart salmon and the British cold smoked baby potatoes in a lemon dressing provide a gentle citrus kick. This is a beautifully light way to kick off your feast.
